I spent a couple of days with a dear Aussie friend and introduced him to the wonderful world of the rabbit 🐇 white ragout.
This animal was present in every farmers house as a backup to chicken shortage or simply as an additional source of protein.
The concept behind its use is similar to the one applied to pigs 🐖: nothing gets wasted!
The meaty parts are used as a main course, liver, heart, lungs and kidneys are minced and used for risottos or pasta sauces. Head, bones and trimmings become stock. #nowaste
For my recipe I added fresh chanterelle in lieu of dried mushrooms 🍄 and rabbit belly to improve texture. I always recommend a light shave of an aged Parmesan cheese before serving.
