    I often get bored of cooking the same foods thats why it’s important to use different cooking techniques to transform the taste or texture of food.
    I have transformed the chicken breast with some anti-inflammatory spices. I added a middle eastern flavour combo with cumin, cinnamon, ginger, turmeric.
    The sweet potato is cooked essentially like a jacket potato but what is called hassleback style. Finely making slits nearly all the way through to the other side. It is then coated lightly in coconut oil and baked in oven.

    454 Calories
    Protein 43 Carbs 48 Fat 10

    Ingredients:
    Extra large sweet potato - sliced 3/4 through to the other side
    1 tsp coconut oil
    3 cups chopped kale
    150 grams Cherry Tomatoes
    1 medium free range chicken breast
    1/2 tsp each of cumin seeds, ginger, cinnamon, turmeric.

    Recipe;
    1. Preheat oven to 200c
    2. In a bowl add the chicken breast to the spices, splash of apple cider vinegar and allow to marinade for 20 or so Mins.
    3. Add the slit sweet potato to the pan, rub lightly with coconut oil and bake for approx 30 minutes until softened. Add to the oven.
    4. Remove from the pan from the oven.
    5. Add the remaining oil to the change pan. Add the chicken breast skin side down to the pan and the tomatoes. Put the pan back in the oven for another 20 minutes.
    6. Remove from the oven. Check to see if chicken is cooked through.
    7. Add the kale to the pan and allow to soften with the residue heat.
    8. Voila.

    You can double - quadruple up the ingredients to make a sufficient meal prep for a few meals saving time in the kitchen!

    1. I’m 18 and a senior in Highschool. I’m still waiting to see if I get accepted into my dream college but should know very soonnn!!
    2. I have 2 dogs and they are the best ever. One is a dachshund and the other is a husky lab mix. You’ll probably see pics of them on this account from time to time!
    3. I love rainy days but I have a huge phobia of storms. On a rainy day I love baking and reading but as soon as I hear lightening I kinda freak out😂
    4. I’ve been a competitive cheerleader for the past 6 years of my life but now it’s over so I’ve gotten into crossfit and I love it.
    5. I love adventure. I always try to push myself outside my comfort zones. I try to let my faith guide my actions so if I feel God calling me to do something uncomfortable I always say yes and everything works out the way it is supposed to.

    Someone asked me how I make oats taste good / better so here it is.

    Without going calorie and ingredient overboard I make sure I keep an eye on my portions.
    I load up on naturally low calorie real foods such as cinnamon, vanilla, berries which have impactful flavour bombs 💣
    ----
    This would typically be my portion size as a post workout meal alongside some protein.
    ----
    👈🏼 Plain oats.
    396 cals
    1/2 cup steel cut oats
    1 cup dairy free coconut milk
    ----
    👉🏼 Pimped oats
    541 cals
    ^^^ same template as above but with
    + 1/4 cup frozen blueberries
    + 1/2 tbsp almond butter
    + few homegrown strawberries
    + 1/4 Banana
    + 1 tsp of ceylon cinnamon (Ceylon is the type of cinnamon with the actual health benefits)
    + 1/2 tsp vanilla extract
    + pinch of salt
    + sprinkle of unsweetened desiccated coconut

    Now, obviously there is an increase of 145 calories. But for the sake of making the oats actually palatable and nutrient superior it is worth it.
    If I was on a reducing my caloric intake I would look at other sources to reduce the 100 calories from somewhere else instead of losing out on it here. But that's just me and my approach. Ryan 💪🏼❤️
