    Since I fry the turkey and it doesn’t spend hours in the oven getting basted, I infuse as much flavor into the bird as possible using a salt brine + aromatics. The bird cooks up super juicy and flavorful with minimal effort. ▫️
    Brine solution: 1 pound kosher or sea salt, 1 pound brown sugar, 5 pounds ice, 6 qts hot water. In a 5 gallon container, combine dry ingredients with hot water to dissolve. Then add in ice to chill. Then add aromatics and stir, then lower the turkey in. Cover and let sit in a cold place for 8-24hrs. Remove from brine an hour before cooking and dry the hell out of it with paper towels before frying. ▫️
    Aromatics: 2 clementine peels, 1 Apple cored and sliced plus skins, handful of peppercorns, handful of fresh marjoram. You can get creative here. The real important thing is the ratio of water:salt:sugar so the osmosis works properly. ▫️

  • In the U.S., most people will celebrate Thanksgiving tomorrow. It's a day to come together with family and love ones, and there's usually lots of food to feast on.

    If you're watching your weight or on a training plan, this can be a very challenging time; you want to eat the goodies and spend time with friends and family, and you have a goal.

    Like I told my clients, Thanksgiving comes only one day a year. One big meal is not going to make you fat; just like one sensible nutritious meal is not going to make you fit.

    1. Enjoy your time with family. Enjoy the food that you're blessed with.

    2. Eat mindfully. Eat the foods you crave and stop when you are comfortably satisfied. Don't just keep nibbling because you are bored or because "it is there"
    .
    3. Get moving! After eating a large meal that's high in carbohydrates and/or sugar, go for a 10-15 minute walk; do 50 air squats in the living room; play a game that requires moving around. This will trigger your body to metabolize the food you just ate, instead of storing them as fat. With ingested calories, it is "use it or store it."
