  • This is an really interesting Cake Order. Cant make up your mind? Need a tart? Need a brownie? Need a Chocolate Mousse? Need a Chocolate Layered cake? Why not lets mix them all together.. 🤔🤭🤭 What is in the cake? Sweet Tart Crust As a base, coated with a 70% chocolate ganache. Chocolate Brownies, 70% Chocolate Truffle Mousse and lastly topped of with maltesers. 😁 This is really a chocolate 🍫🍫 overloaded cake.

  • We ferment our Cacao in larg bins, after four days the cacao is fully fermented and the white pulp is now turned into liquid.  In the first stage of fermentation, the wild yeasts rapidly multiply in the sweet, fruity pulp, converting the pulp’s sugar into alcohol. This initial phase takes place in the absence of oxygen
    Phase 1 (anaerobic): sugar + yeast –> alcohol + carbon dioxide + heat

    The second stage is the bacterial phase of fermentation this takes place in the presence of oxygen. This phase requires a significant amount of oxygen, so we'll typically turne our beans at least twice during the fermentation process, in order to introduce oxygen into the heap, and to ensure that all of the beans are fermented evenly.

    Phase 2 (aerobic): alcohol + bacteria + oxygen –> acid + water + heat

Soft Egg Sponge Soaked with Coconut Juice, Coconut Pudding, Tons of Fresh Jackfruit pieces and lastly its adorned with Thai Red Rubies (My Brother in Law, Parents 44th Wedding Anniversary Cake) 40 to 44 years into a wedding is term a Ruby Wedding Anniversary, hence the idea. And there you go. Aroy mak mak!! ☺☺ Flavours of Thailand.
